Doctor: What is the best bread and how many fibers should we eat per day

The best bread is the one made with sourdough, but be careful with the sourdough bread from supermarkets, with an extended shelf life, as it contains additives. The advice and warning come from Dr. Roxana Voica, a specialist in gastroenterology, PhD in infectious diseases, with expertise in nutrition and ultrasound at Regina Maria Hospital. She also explains how many grams of fiber we should eat per day.

Roxana Voica was asked how we can choose what bread to eat.

"The best bread would be sourdough bread. Bread made in bakeries with sourdough, because the other should have a very short expiration time. The sourdough bread from supermarkets, with an extended shelf life, clearly has additives.

Correct would be whole grain bread with sourdough, without so many additives. Certainly, sugar in minimal quantity, which somehow activates the sourdough, is not a problem. That's not where the issue lies.

Ideally, we should make it at home and use whole grain flour, from whole grains. It is said that rye bread and rye flour would be one of the healthiest," explained Roxana Voica.

She also talked about the amount of fiber we should consume in one day.

"We should eat 30 grams of fiber per day. It's very difficult to reach.

We, Romanians, as a nation, are used to eating a lot of food based on vegetables and plants, in general. We are getting closer to fast food and a Western diet, which makes us consume fewer and fewer fibers.

Fiber means everything that grows on the ground - vegetables, legumes - such as beans, chickpeas, lentils, cream soups, hummus, any peas, black beans, nuts and seeds, raw and unsalted mixes, whole grains, quinoa, everything that includes fruits.

Be careful, fruits also contain sugar. We can eat them as dessert, at the end of the meal," added Roxana Voica.
